Guest Post: Pam at Pamela's Heavenly Treats

Today your guest blogger is the lovely Pam! She blog about the decedent creations she whips up, over at Pamela's Heavenly Treats. Pam was my first swap sponsor, has a beautiful family, and some amazing desserts! Be sure to head over and check her place out for the perfect treat for your next partaaaay!

Hi! My name is Pamela from Pamela's Heavenly Treats, where I make healthy cupcakes and cookies mainly, I will dabble in other desserts if need be.  I make all my treats with 100% whole wheat flour and I have a few special ingredients that I add also, to give my healthy treats that moist, delicious taste.  Today I am going to make Whole Wheat Citrus Vanilla Cookies, these cookies are so moist and cake like, this is a very simple recipe, if you follow it; you will have a heavenly healthy treat.

1 1/3 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 cup unsalted butter (softened)
1 cup light brown sugar
2 eggs
2 tbsp orange zest
2 tbsp fresh buttermilk
2 tsp vinegar
2 tsp vanilla

Mix wet ingredients, and then add in your dry ingredients, you will notice that the texture of the batter is like a cake batter, that is fine that's how it's supposed to be.

Use a small scoop  and put 12-15 scoops on your parchment paper covered baking sheet. Bake on 350 for 10 minutes. Cool on a wire rack.  Your kitchen will smell like an orange orchard when they come out the oven.

Once they are cooled, you can leave as they are, or do like I did and make them all neat and the same size, and cut out with a round cutter.  These cake like cookies can also be used to make cookie sandwiches, where you pipe frosting on one side of cookie and put another on top.

I want to thank Mar for allowing me to guest post on her lovely blog.  Please come and visit me over at Pamela's Heavenly Treats and I also have an Etsy Shop where you can get my healthy cupcake/cookie/bread/brownie mixes.
